Goulash

Before we get started, you need to know that I know my version of goulash is not the traditional version. I do not like soup and while I love stew, this is not a stew. It’s a marinara pasta dish that we’ve always called goulash.

So, now you know.

Ingredients:

  1. 2 mild Italian sausage links
  2. 1 jar of marinara sauce
  3. 1/2 can of black olives, sliced
  4. 1 jar of marinaded artichoke hearts
  5. 1 bag of frozen stir fry vegetables (asparagus, carrots, onions, squash)
  6. 2/3 box of penne pasta
  7. Parmesan cheese (to taste)
  8. Garlic powder (to taste)

Steps:

  1. Cook penne pasta in separate pan, drain and set aside
  2. Take sausages out of their casings
  3. In a large sauce pan, break meat apart and brown
  4. Add frozen stir fry vegetables
  5. Drain some of the excess moisture
  6. Add marinara sauce, black olives; stir
  7. Add pasta; stir
  8. Add artichoke hearts; stir
  9. Sprinkle parmesan cheese and garlic powder and stir in
  10. Serve with more parmesan cheese
