Orange-Ginger Chicken Bake
Prep Time: 15 min. | Cook Time: 75 min. | Serves: 2
2 boneless chicken breasts
1 orange
2 garlic cloves
1 piece of raw ginger
1/4 cup orange juice
Olive oil (enough to cover the chicken)
STEPS
- Cover bottom of baking pan with a thin layer of olive oil.
- Place chicken in pan, spread a little on top of chicken.
- Grate ginger, sprinkle on top of chicken.
- Chop or press garlic, sprinkle on top of chicken.
- Remove 4 slices from the orange. Squeeze the rest of the orange on top of the chicken.
- Pour orange juice over chicken, too.
- Place two orange slices over each chicken breast.
- Cover, bake for an hour.
- Uncover and continue to bake about 15 minutes.
It looks and reads wonderfully. You select–or happen to have around–so many fine ingredients. Orange, ginger, chicken breast, olive oil. Sounds so healthy!

It was delicious! The only thing I would do differently is to marinade the chicken before baking.
